Pennette with Seitan

By now it seems that this is a customary dish of the vegan tradition. So I can’t leave it out ;) In a short time and with few ingredients, you‘ll manage to cook an excellent first course, which is able to convince even the most sceptics!  :cool:

INGREDIENTS (to prepare a sauce for 3-4 people)

  • Half of a red onion
  • Half of a big carrot
  • 300 gr of tomato sauce
  • 120 gr – 150 gr of griddled seitan ( the one I used had vegetables too; grilled seitan is much more tasty but you can use the natural one too and you can find it in most supermarkets)
  • Extra-virgin olive oil
  • Salt
  • Pepper
  • Parsley

Chop the onion and the carrot finely and then fry them lightly with a drop of oil; don’t wait too long before adding the chopped seitan. As soon as it gains flavour, add the tomato sauce and the parsley. I usually cook it for 15-20 minutes, controlling that it doesn’t get too dry, and then I salt and pepper it. Boil a pot of water and cook the pennette (they usually require 15 minutes). In the end, drain the pasta and add the sauce you’ve just prepared. Voilà! Do you miss the old\traditional pasta with Bolognese sauce yet?

Bepi-Biscuits (E)

Hi!

here we are with my first english recipe … let’s see how many mistakes I can make  :-S

This recipe isn’t healthy or dietetic at all. But it’s all we need in order to begin monday morning with the right smile  :smile:

Ingredients:

  • 100 grams soy butter (softened, so let it out of the fridge for some minutes)
  • 200 grams flour 00
  • 100 grams sugar
  • pinch salt
  • soy milk
  • jam (I’ve chosen the cherry one, but you can use the one you prefer)
  • icing sugar

Mix the butter with flour, salt and sugar; than add soy milk until you get a compact dough, working with your hands. Let the dough covered in the fridge for half an hour.

Then roll it out until about 5mm or less. Create your biscuits using a round cutter in order to get circles with 5 cm of circumference, more or less.  Cut the centre of half biscuits, in order to obtain little donuts.

Preheat the oven to 180 C and bake for 15-20 minutes, but -care- keep an eye on them!  :cool:

Finally, when they are cold, you can compose your biscuits with one circle and one “donut”, putting jam in the middle and decorating with icing sugar.
